Teff and All purpose flour Pancake ጤፍ እና ፉርኖ ዱቄት ፓንኬክ
Ingredients and 1/4 cups Teff flour
1 egg, beaten
1 teaspoon baking powder
1/2 cups buttermilk
1/4 cup oil
2 tablespoons butter melted
In a large bowl, add together Teff flour and all-purpose flour, baking powder and salt. Break eggs into small bowl, combine egg and buttermilk. Whisk together until blended. Add to flour mixture, oil stirring only until smooth. Add the two tablespoons melted butter, and stir until combined. Over medium heat, heat the pan. Lightly grease surface with melted butter. Drop about 1/4 cup batter into the pan. Cook until bubbles edges begin to brown. Gently flip and continue to brown the other side. Repeat with remaining batter.
fluffy scrambled eggs ፍላፊ እንቁላል ፍርፍርና አትክልት
2 Tbs. water
1/2 chopped onion
1 ripe tomato chopped
1 red peppers
2 cooked red potatoes cubed
2 Tbs. chopped Sweet basil
salt and pepper to taste
2 tbsp shaved, grated or shredded parmesan cheese
Break eggs into a bowl, whisk together the eggs and water until well blended. In a large fry pan over medium heat, warm the olive oil. Add cubed potatoes cook for 8 – 10 minutes to get brown and crisp and take out. In the same pan add more oil, warm the olive oil. Add the onion and cook, stirring until golden, about 5 minutes. Raise the heat to high and add the diced tomato, chopped pepper, fresh spinach, a basil, salt, and pepper. Cook until the tomato is heated through and any juices have evaporated about 1 minute. In another pan, heat the oil over medium-high heat. When the oil is hot add the eggs and stir quickly they will puff and cook very quickly. stir gently until the eggs set, but are still moist about 3 minutes. Add the vegetable and cheese. Fold the egg over.Take out on the plate serve immediately with red potato and Teff pancake.
Serve with syrup and butter.
