                      beef jerky mixed with injera (Quanta Firfir) ቋንጣ ፍርፍር

1-2 cup dried injera or fresh injera that has been torn up into bite-size pieces

1/4 cup Quanta (beef jerky) chopped small pieces

2  onions chopped

1/4 cup olive oil or any cooking oil

2-3 ts  garlic

2 tbs berbere

3 tbs clarified butter (niter kibe)

water

salt

         Heat a  saucepan over medium heat. Add onions and oil. Until they become translucent. Add oil and saute another couple minutes. Add half the garlic and saute yet another couple minutes.Add berbere and continue to saute. The mixture will start to stick. Add a couple tbs of the water then Add garlic, Quanta (beef jerky) and saute for few minutes. Then add water and salt. When start boiling lower the heat and add butter, dried injera (dirkosh) or fresh injera and remove the pan from the heat. Serve with fresh injera.
