Tzatziki(Homemade yogurt with cucumber)እርጎ በኩከምቢር
1 cup of homemade yogurt.
1 cucumber finely grated and drained.
2 cloves garlic finely minced.
1 Tbls white vinegar
salt and pepper
Grate the cucumber and strain the shreds in a fine mesh strainer or squeeze out all the liquid. let stand in the strainer for few minutes to drain any remaining water or Squeeze once more to drain.
In a medium bowl, combine the yogurt, garlic, oil, vinegar. add a grated cucumber. Stir until well combined. Taste and season with salt and pepper and olive oil. chill 1 to2 hours before serving so the flavors can marry. Serve chilled with Teff pita or Teff bread.
