Teff Injera Kategna

1 piece of fresh-baked Injera or old

3 to 4 tbs of clarified butter( Ethiopian  kibbee) or olive oil (any kind of oil)

1 to 2 tsp  of berbere according to how spicy you like


Melt the butter or use olive oil mix with Berber spread the mixture on to fresh injera like you are buttering bread leave it on the mittad until it becomes just a little crispy. If it is not fresh injera turn the oven or mittad on. Heat for about 10 -15 minutes until it becomes a little crispy.

If you use olive oil or other oil Infuse with  Korerima and Koseret. Place all the ingredients in a medium saucepan then add oil and bring it to extremely low heat, simmer and cook for a few minutes, stirring regularly. Carefully strain the herb out through a sieve or cheesecloth into a clean container, so the oil tastes clarified butter.

you can infuse oil using herbs like rosemary, thyme, and oregano, etc)


የቃተኛ አሰራር

ለማዘጋጀት ሚያስፈልጉ ግብዓቶች

1 የጤፍ  እንጀራ ወይም  ጤፍ ከሌላ እህል ጋር ተቀላቅሎ የተጋገረ እንጀራ
3ውይም 4 የሾርባ ማንክያ የተነጠረ ቅቤ ወይም ዘይት(የወይራ ዘይት)
1 ወይ 2 የሻይ ማንክያ በርበሬ
በመጀመሪያ ቅቤውን ማቅለጥ ወይም ዘይቱን ማሞቅ ከዚያም በርበሬውን መለወስ።ለቃተኛ የምንጠቀመው እንጀራ ለዘዝ ብሎ ወይም ደረቅ ብሎ እንጋግራለን።የተጋገረ ከሆነም እንጀራውን በምጣድ ላይ እናሞቀዋለን። እንጀራው በትኩሱ ወይም እንደሞቀ እንዳለ ያዘጋጃችሁትን የቅቤና የበርበሬ ልውስ እንቀባዋለን ከዚያ ለሁለ እናጥፈውና በትኩሱ እናቀርበዋለን።እንጀራ ከምንጋግርበትም ቀን ውጪ ከሊጡ ቆንጥረን እንጀራ እንደምንጋግረው በትንሹ አዘጋጅተን መጋገር እንችላለን።
