Spicy Spinach and feta cheese with Teff flour የሚያቃጥል ስፒናች እና የፍየል ወተት አይብ በጤፍ ዱቄት

Ingredients

½ cups Teff

2 cups all-purpose flour

1tablespoon baking powder

2 cups spinach, Steamed, squeezed and finely chopped

1 cup feta cheese, crumbled

2 eggs

4 green onions, finely chopped

1/2 onion(chopped)

1-2 jalapeno pepper (green pepper) chopped

3-4 chill pepper(chopped)

3 clove garlic, minced

½ cup oil

1⁄2 teaspoon salt

1/2 teaspoon black pepper

Preparation

Preheat the oven to 375 °F, 190 °C.  Line a 12- cupcake tin with cupcake liners. In a large mixing bowl, mix all of the dry ingredients together.  In another bowl, whisk the eggs, milk, and oil together and add to the dry ingredients. Whisk together until just combined. Heat 2 tsp oil in a large skillet over medium-high heat. Add onion and garlic. Cook and stir. Add green onion, chills, jalapeno pepper, Salt and pepper. cook and stir 1 minute or until fragrant. Turn off and set aside to cool down. Add feta cheese and chopped spinach and fold in with a spatula. Then mix with wet ingredients. Spray oil the muffin cup.   Fill the muffin/cupcake cups to the top.  Bake in the hot oven for approximately 20 minutes or until a toothpick that is inserted in the center of a muffin comes out clean. Allow the muffins to cool 10 minutes. Serve them warm. Enjoy!
