Spicy Okra stew (spicy okra wot) ባሚያ ወጥ
1 lb Okra ( cut into 1/4 chunks)
2 medium onion
3-4 cloves of garlic minced
2 tomatoes (chopped)
2 tbsp tomato paste
2 tbsp berbere or Red Chili Powder
1/2 cup oil
1-2 tsp Tikur Azmud–Black Seed powder
1 tsp Korarima or false cardamom powder
First Wash and dry the okra. Remove the stems from the okra and then chop them into 1 or 2-inch pieces and place them in a bowl. Boil water in a small saucepan. Drop the tomato into the boiling water for 1 minute. Take out when the skin begins to peel. Let it cool down for a few seconds. Peel the skin from each tomato, then coarsely chop.
Heat the oven In a medium skillet add the onion. Saute until the onion is just beginning to soften over medium heat. Add oil, berbere, tomato paste, and chopped tomato. Cook for 5 to 10 minutes. Add okra, garlic, and a pinch of salt. Add water, reduce the heat simmer until the okra begins to light brown, Stir occasionally. The okra will be slimy. cook until getting thick stew. Add Black Seed powder(Tikur Azmud ), and false cardamom powder (Korarima). Simmer for a few more minutes to blend the flavors. Serve with Injera or sourdough bread.
