Spiced Beef Jerky(Quanta) ቋንጣ
Ingredient
4-5 lbs beef
awaze (Mix berbere with wine paste ) or Berbere, mitmita (Chili powder)
2 tbs korerima( false cardamom )
2 tsp black pepper
1/2 cup wine
Salt

Mix awaze (Mix berbere with wine paste ) or Berbere, mitmita (Chili powder), wine, and salt. Remove fat and cut them in long strips with zigzag shapes that used to be hung on a rope, use ( hemp rope/thick string) to dry by open-air).Marinate meat with mixed dressing. hung on a rope, to dry by open air. It’ll dry within a week or Place the meat on a food dehydrator. Dehydrate until crisp dry. If you hung on a rope the taste of the beef is different from the dehydrator. Or you can dry by the oven on low heat for 3-4 hr.
served as a snack or appetizer or add to firfir.

1/2 ኩባያ ዋይን ወይም አረቄ

አዋዜውን ማዘጋጀት ። ሳጋውን ጮማውን ከቀይ ስጋ መለየትና ቀዪን ስጋ መዘልዘል።አዋዜውን ፣ኮረሪማ፣ ጥቁር ቅመም፣ጨው እና ዋይን ማደባለቅ ።የተዘላዘለው ስጋ ባዘጋጀርው አዋዜ መለወስ እና ትንሸ ሰአት መተው ። በፈልግ ቀዝቀዝ ያል ቦታ ገመድ አስረን ማድረቅ ካልሆነም በማድረቂያ ማድረቅ ወይም በምድጃ ማድረቅ።ከሁሉም ግን በአየር የደረቀው ጣእሙ በጣም ቆንጆ ነው
