Oxtail with vegetable stew የበሬ ጭራ ወጥ
1 pound beef oxtails (carefully remove fat without taking out too much)
3 carrots peeled, chopped
3 potatoes peeled and cut into small chunks
1 onion, chopped
1½ tsp chopped fresh thyme, or 1 tsp dried
3 tomatoes chopped
5-6 Garlic cloves minced
ginger minced
2 tsp turmeric
2 jalapeno pepper
1 cup red wine
1/4 cup oil
Black pepper
Heat 1/2 of the oil in a large pot over medium-high heat. Add oxtails to the pot. Cook oxtails until browned on all sides. transfer meat to plate as it is browned. Add the remaining oil in the same pot over medium-high heat. Add onions saute until soften. Add carrots, potatoes, garlic, ginger, turmeric, and thyme. Cook until vegetables are golden, about 5 minutes. Add water, stirring occasionally. Add tomatoes, wine, oxtails, salt, and pepper into vegetable mixture, bring to boil. Reduce heat and simmer, covered, until oxtails are tender. Add jalapeno pepper and simmer for about 5 more minutes. Turn of the heat. Serve with injera or Teff sourdough bread.
