Okra and Green Beans stew (okra be fosolia wot) ኦክራ በፎሶሊያ ወጥ
1/2 lb fresh okra
1/2 lb fresh green beans
3 carrots
1 medium onion
4 large tomatoes, peeled and chopped or 1 Canned tomato
1 tbsp tomato paste
1 medium onion, diced
2 cloves garlic, crushed then chopped
1/2 tsp fresh or dried thyme
1/2 tsp berbere or hot pepper powder
4 tbsp oil
1tsp korerima (false cardamom)
salt and black pepper
Wash okra pods, trim stems, do not remove caps and cut. Wash the green beans and cut them. Heat oil in a skillet over medium heat. Saute onion until translucent. Add tomatoes and berbere. Cook for a few minutes. Stirring frequently. Add minced garlic and cook for 5 more minutes. Add okra, beans, carrots, tomato paste, korerima, and thyme. Reduce the heat to low, cover, and simmer gently about 15 minutes until okra and green beans are tender but not mushy. Stir frequently. If the mixture becomes too dry, add water as necessary. Add salt and pepper. Turn off the heat. Serve with injera or sourdough bread.
