Minced Mushroom Teff sourdough bread የተፈጨ እንጉዳይ ጤፍ ዳቦ
Ingredients
1lb mushroom
2 medium onion, finely chopped
2 peeled and chopped tomatoes
4 cloves garlic, minced
1 tsp ginger peeled, and minced
2 teaspoon turmeric ( for yellow bread)
2 -3 tsp berbere or red chilly powder (for red bread)
1 tsp of tomato paste(for red bread)
1 tablespoon freshly chopped rosemary
1tsp Korerima ( false cardamom)
3-4 tbsp oil
salt
Preparation
Place the fresh mushrooms into a food processor or multi chopper until mushrooms pieces are minced. Add the onion in two different medium skillet oven over medium-high heat. Add water and cook just beginning to soften about 5 – 10 minutes.  Stir frequently until the water evaporates. Once the onions begin to soften, add oil in both skillets. Add tomato reduce heat to medium-low to simmer. In one skillet add garlic, ginger, rosemary, Korerima, turmeric, and 1/2 the mushroom. In the other skillet, when the onion softens add berbere, tomato sauce, tomato paste, Korarima, Tikur Azmud, and leave to cook for a few minutes. Add little warm water as needed, continue stirring occasionally until the water has reduced. After the water has reduced add 1/2 of the mushrooms. Allow mushroom to cook until start to release their liquid about 10 to 15 minutes. Reduce heat. Add pepper and mix it well. Season with salt.  Simmer another few more minutes. Remove from heat let it cool down.

Teff sourdough Bread
Ingredients
1/2 cup Teff
1/2 All-purpose flour
1tsp sugar
1 tsp dry yeast
Warm water
4-5 tbsp oil
preparation
First mix active dry yeast, Sugar into the lukewarm water and let it stand for about 5 minutes when starts to bubble add 1/2 cup teff flour mix it well and cover with plastic wrap and let stand at room temperature to ferment overnight for 10 to 12 hours, even longer is fine. This will be used as yeast for the dough. The next day add 1/2 all-purpose flour. Add oil and knead very well by hand.  You have to knead until it becomes smooth. Make sure that the dough is flexible. and cover with plastic wrap .and allow to rise until double .knead again 2-3 minutes and cover it again, and leave it in a warm place to rise. Meantime preheat the oven to 375° F. Separate the dough in two equal portions, and mix one portion yellow mushroom sauce and the other portion mix red mushroom sauce. pour into a greased ramekin. Bake for 20-25 minutes or until cooked through. Allow the bread to cool down completely, before you serve.
