Teff Flour and barley Flour porridge(Genfo) የጤፍ እና የገብስ ገንፎ
1 cup teff flour
1 tbs berbere
2 tbs butter or olive oil
1 tsp salt
In a bowl mix teff flour, barley flour, berbere, mitmita, and salt. Add cold water and mix it well, or you can mix only teff flour, barley flour, and salt and add berbere, mitmita .Butter or oil at the end as you like.mixing with cold water helps to avoid lumps. Heat large non-stick saucepan or any saucepan add some butter or oil . Then add teff and barley mixture bring to boil. By wooden spoon Stir well to avoid lumps. Keep stirring continually with a wooden spoon for about 10 -15 minutes until the mixture is well moistened. In a separate saucepan, boil water and keep hot. Add little water as needed. the genfo should be thick like springy dough .keep stirring don’t let the bottom scorch. Remove from heat, place the dough in a round bowl and make the genfo like the shape of a bowl, and serve hot or if you don’t add the berbere and mitmita at the beginning make the genfo like a ball and hollow out a hole in the middle form a hall in the top. In a small saucepan melt butter or olive oil then berbere and mitmita pour into the genfo hole and serve hot with a spoon.
Marinade Olive Oil
Fresh or dry oregano
Combine olive oil, rosemary, thyme, oregano, garlic and koseret in a small saucepan and heat just until warm over low heat. Remove from the heat and stir to combine. Place the olives in a jar and pour in the olive oil mixture. Shake the jar to coat the olives.
