Collard greens with beef (Gomen besiga) ጎመን በስጋ
Ingredients
2 or 3 bunch Collard Greens
1/2 Lb beef or lamb cubed into ½ inch pieces
1 onion
3 potato
oil
1 tbsp garlic
1 tbsp ginger, minced
Scallions or Green Onions
jalapeno pepper (green hot pepper)
Salt and pepper
½ tsp false cardamom (korerima)
Preparation
Wash the Collard greens well. Cut off the coarse part of the stems and chop. Chop the leaves coarsely and set them aside. In a large skillet add oil and add onion, collard stems, and beef or lamb simmer until beef is soft. add water stir for about 5 to 10 minutes. Then add minced garlic and ginger cover the lid and bring to a boil. Cook the meat over medium heat. When the meat soft add potato. simmer for few minutes then add the collard leaves and add half of the chopped jalapeno pepper (green hot pepper). Reduce heat to low cover the lid and cook, stir occasionally, until collards are tender, and Simmer until the liquid evaporated. When the collard green becomes tender add false cardamom (korerima), salt, and pepper. Add the other half of chopped jalapeno pepper (hot peppers) and remove it from heat. Serve with injera, Teff bread, Teff Ambasha, Teff Kita (Teff tortilla or pita).
