Black beans, Bell pepper, Mushrooms and avocado Teff pita (ጥቁር ቦሎቄ በ ቃሪያ እንጒዳይ የተፈጨ አቭካዶ በጠፍ ቂጣ)

1 /2 lb black beans

mushrooms cut into  quarter

1 medium red onion, thinly sliced

2 bell pepper (green, yellow, red, or orange any) chopped

jalapeno pepper seeded chopped

2 tomatoes

sesame paste (tahini)

2 lemon or lime

2 tbsp olive oil

1 teaspoon ground  cumin

1 teaspoon dried oregano and thyme

chopped cilantro

3 clove garlic

salt and pepper

   pita  or tortillas

4 cup  (Teff flour, all-purpose flour, cornflour)

Guacamole(Avocado)

1 avocado, diced ( Guacamole)

1 medium red onion

jalapeno pepper seeded chopped

Juice of 1/2 lemon or lime

salt and pepper

chopped cilantro

Preparation

Soak black beans overnight in the large pot completely covered by water. soaking your beans can also help them cook more quickly. The next day drains and rinses the beans in cool water. Add beans to a large pot with water.  Bring the beans to a boil and reduce heat to a simmer. Cook until the beans are soft. Combine the drained black beans, garlic, salt, and black pepper in a blender or food processor. process for 2 minutes, then adds sesame paste and process on high speed for 5 minutes until black beans are extra smooth. Add olive oil and lemon or lime juice and sea salt and Black pepper process for 1 more minute. Season with salt and pepper.

Heat oil over medium-high in a medium skillet. Add onion cook until onion softens. Add mushrooms, bell pepper, and jalapeno pepper cook for about 4 minutes. Add tomatoes stirring occasionally, lower the heat add cumin, thyme, oregano, and cilantro. Season with salt and pepper. Once the vegetable is tender turn off the heat.

               Guacamole(Avocado)

Cut the avocado in half, remove the pit and scoop the flesh out with a spoon into a medium bowl. Smash the avocado Add lime juice immediately to prevent browning. Add (minced garlic, onion, jalapeno pepper) chopped tomato, chopped cilantro., add pepper according to your desired hotness, and a pinch of salt and pepper. Mix together. if you want to chill the Guacamole don’t add the tomato because it will change the flavor. add it when you serve.

at last Spread, the Black pepper over tortilla layer vegetable and guacamole. evenly over half of the tortilla, tuck insides of tortillas and roll up tightly to enclose filling and serve with guacamole
