Beet, Potato, carrots, and lettuce salad with Teff bread ( keysere, dnch,karot ena slata ) ቀይ ስር ድንች ካሮት እና ሰላጣ
2 large beets
hot green pepper or jalapeno pepper
1/4 cup olive oil
salt and black pepper
2 tbsp apple vinegar
Boil the potatoes, beets, and carrots in separate pots until tender. Drain. When they are cool enough to handle, Peel the beets and potatoes, and carrot. Cut in bite-size. Place the potatoes and carrots in a large bowl to cool. Place the beets in another bowl; refrigerate until ready to serve the potato salad because the beets will color the potatoes, and carrots if mixed in. Take out and mix beet, potatoes, carrots, tomato, and lettuce. Add the green onions, red onion, pepper, and parsley to the salad and mix well.
In a small bowl or measuring cup, whisk together the olive oil, vinegar, lemon, salt, and pepper. Toss with the vegetables, adjust salt. Serve with teff bread or teff pita.
