Beef and Lentil Stew ስጋ በድፍን ምስር ወጥ
Ingredients
1 lb beef chuck cubed
2 large onion diced
½ cup whole lentils
2 tbs ginger, minced
5 cloves garlic, minced
1 tsp turmeric
1 tsp korerima (false cardamom)
1/4 cup clarified butter or oil
2 green pepper, sliced thin
Salt
preparation
Add the onion in a medium skillet over medium heat. sautee for about 3-4 minutes then add beef. Cook onion and beef for few minutes before adding oil, stirring often. cook onion and meat until they are soft. Add the clarified butter or oil. simmer for more minutes at medium-low heat. Add Lentils, ginger, garlic, and turmeric and mix well. Add some water as needed, and simmer. stirring occasionally. Add the salt, cover, then reduce heat and simmer, until the lentils are tender. When the stew thickened a bit. Add false cardamom and sliced green pepper. Simmer 10 more minutes. Serve with injera or sourdough bread.
