Baked Salmon, Baked Vegetable with Teff sourdough Bread with Ethiopian coffee (Salmon be atkelt beTeff dabo) ሳልመን በአትክልት በጤፍ ዳቦ

1 1/2 lbs Salmon
1/2 cup lemon juice
2 tbs olive oil
1/2 tsp grated lemon peel
fresh parsley
fresh or dry thyme
2 cloves garlic
1/2 tsp salt and pepper

For the Salmon,
Mix lemon juice, oil and 1 teaspoon of the thyme in a small bowl. Place salmon in large resealable plastic bag or dish. Marinade salmon by the mixture turn to coat. Refrigerate 30 minutes. The longer is better. Preheat the oven to 450 degrees F. Place the salmon fillet in an oven-safe skillet. Lightly salt and pepper. Sprinkle with parsley. Drizzle with olive oil. And squeeze the lemon juice of 1/2 lemon on top. Bake in the oven for 20- 25 minutes or until salmon done. Cut salmon equal portions.

Baked Vegetable
1 onion (chopped)
1 red bell pepper (chopped)
1/2 cup green beans
1/4 cup corn
8 oz fresh mushrooms
2 tbs olive oil
fresh or dry thyme
2 cloves garlic
1/2 tsp salt and pepper
1 tablespoon fresh parsley (chopped)
fresh basil (chopped)
preheat the oven to 450 degrees F. In a greased baking pan, toss vegetables with oil, salt, and pepper. Roast for 15-20 minutes or until tender, stirring once. sprinkle chopped fresh parsley, fresh basil, salt, and pepper.

Teff sourdough Bread (buns) (ጤፍ ዳቦ)

How to bake Teff sourdough Bread (buns) (ጤፍ ዳቦ)

Teff, Rye, Oat, Wheat, All-purpose flour (any)mix
1 tsp sugar
1 tsp dry yeast
1 tbs salt
Warm water
Spice (coriander, Nigella sativa Black seed (Tikur azmud), Fenugreek(Abish, Caraway Nech azmud) powder 1tbs each
1 cup oil

First mix active dry yeast, Sugar into the lukewarm water and let it stand for about 5 minutes when starts to Bubble add teff flour mix it well and cover by the lid and keep to ferment in a warm place overnight. Next day add the flour (⅓ teff ⅓ rye ⅓ oat and 1 cup all-purpose add oil then we have to knead very well by hand or mixer( start slow) and go up to speed so flour won’t be flying everywhere around the house about 10 to 15 minute It depends on the mixer and it depends on the flour. You have to knead until it becomes smooth. then cover with plastic wrap and allow to rise until double knead again a 2-3 minute and cover it again and leave it in a warm place to rise again. Then spray baking spray into the pan not to stick or Wrap inside by baking paper or banana leaf. Roll it out 1/2 inch thick. Use a biscuit cutter to cut bun shapes and transfer them to an ungreased baking sheet. Re-roll the dough and cut more shapes until all the dough has been used. Press a light layer of flaxseed and or sesame seeds gently into the buns (Optional). Cover the buns lightly and let rise until doubled. Preheat the oven to 425 F – 450F. Bake buns 18-20 minutes. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to continue cooling. After completely Cool down a slice in half. Serve Baked Salmon with vegetable on teff bread or by themselves,  any dressing you like with fresh Roasted  Ethiopian coffee.enjoy
