potatoes and cauliflower blend ground spices ( garam masala) with Teff pita
Ingredient
4 potato (cubed )
1 ½ cup cauliflower
4 tbsp olive oil
½ tsp cumin
1 cup onion
1/2 tsp turmeric
1/2 cup tomatoes
1 tsp garlic and ginger paste
1 tsp blend ground spices ( garam masala)
1/2 tsp coriander powder
Salt and pepper
1/2 cup Coriander leaves chopped
1 tsp dried fenugreek leaves
preparation
Peel and cut the potatoes into cubed and cut the cauliflower florets, dry the cauliflower thoroughly before cooking. Heat olive oil in a large saucepan. Add cumin and allow to splutter then add the chopped onion. Stir onions until become golden, and translucent. Add tomatoes Stir into onion mixture. Add ginger and garlic paste. Add red chili powder, a Hot blend of ground spices ( garam masala), turmeric, fenugreek leaves, salt, and pepper. Add the potatoes and stir to coat with the sauce. Reduce the heat, cover the pan with the lid and cook on low heat about 8 -10 minutes, stirring occasionally, after half cook add cauliflower stir into the sauce to coat and a few tablespoons of water. cook 3- 5 minute. mix the potatoes and cauliflower with the sauce. Cover and allow to simmer until potatoes are cooked. Cover and cook over medium heat 5 to 10 minutes. Then, remove the lid, stir, and cook until the cauliflower and potatoes are cooked through. Garnish with cilantro and serve with Teff pita or sourdough bread.
Ingredient for blend ground spices ( garam masala)
7-8 cinnamon sticks
3 tbs cloves
1⁄4 cup black pepper
1/4 cup whole cumin seed
1⁄2 cup whole coriander seed
8-10 black cardamom (false cardamom)
3 tbs green /white cardamom ponds
3 -5 dried red chiles or red chile flakes or 1 teaspoons cayenne pepper
1/2 tbs whole black pepper
1 piece whole dry ginger
1 nutmeg
3-4 dried bay leaves
preparation
First, dry the ginger. grind the dry ginger first then add the broken nutmeg and cinnamon sticks into fine powder take out and grind the rest and mix all together.
