Ingredient
½ Fresh Collard Greens
½ Fresh spinach
½ Fresh Kale
½ Fresh mustard leave
Fresh parsley
2 medium size onions
celery
3 Scallions or Green Onions
1 tbsp minced ginger and garlic
4 hot pepper (green hot pepper)
½ teaspoon berbere or Cayan pepper or red chili powder
1 tablespoon corn flour
salt and pepper
olive oil
Preparation
Wash the kale, Collard greens, mustard leave and spinach well. Trim the leaves from the stems. Grind the onions, celery, and the stems. Heat large skillet add the onion and stems .stems.until the collared stem soft. Add berbere or Cayan pepper or red chili powder, olive oil, minced ginger, and garlic. Add some water. Grind all the leaves, green hot pepper, green onions and parsley add into the skillet .mix cornflour with water and then add. Simmer over a medium heat until the liquid evaporated and Continue cooking until greens are tender. Add salt and pepper. turn of the heat serve withTeff pita, Teff bread or injera.
