Collard Greens (Gomen) ጎመን
Ingredients
2 or 3 bunch Collard Greens
1 onion
olive oil (any oil you Prefer)
Garlic
jalapeno pepper (green hot pepper)
Salt and pepper
Preparation
Wash the Collard greens well. Cut off the coarse part of the stems and chop. Chop the leaves coarsely and set aside. Chop the onion. Chop Jalapeno pepper and garlic too. In a large skillet add olive oil and add chopped onion and chopped collard stems add some water about 5 to 10 minutes. Saute until the collared stem soft When the steam soft add the collard leaves. Add a small amount of water then add garlic cover the lid. Simmer 10 to 15 minutes over a medium heat until the liquid evaporated. When the collard green become soft add jalapeno pepper, salt, and pepper. Test if the collard greens are ready. You can eat with injera, Teff bread, Teff Ambasha, Teff Kita (Teff tortilla or pita)
