Fish and vegetable stew with injera (asa be atkelt be injera)አሳ በአትክልት በእንጀራ
Ingredients
1 1/2 lbs fish fillets( cut into large pieces)
2 medium onions chopped
2 green peppers chopped
2-3 carrots chopped
2 potatoes peeled and cubed
2 tomatoes chopped
2 Green onion chopped
Leek chopped
1 garlic
ginger
celery
Cilantro
fresh rosemary
thyme
1⁄4 cup olive oil
1 tbs turmeric
Corn flour
water
Preparation
In a frying pan add a little of the oil and coat the fish in the flour with corn flour and fry it in the oil for about 3 minutes So it doesn’t break. After frying the fish keep aside and use the oil for cooking. Heat oil in a large pot add the oil chopped onions for 3-4 minutes until onions are soft.Do not brown.
Add garlic, ginger, celery, Cilantro, fresh rosemary, and thyme in the food processor blend until smooth then add into the pot. Cook for 3-4 minutes more. Then peel, wash and chop carrots, potatoes, tomatoes, Green onion and Leek then add to the pot. Add water and turmeric Stir and allow the vegetable to simmer until all cooked, about 15 -25 minutes. Add the fish season with salt and pepper. Squeeze ½ lemon. Simmer for 3 minutes more.Then remove the heat and serve with Injera. Enjoy.
