Eggplant stew ( Brderjan wot) በደርጃን ወጥ


8 small purple eggplants. ( coarsely diced)

2 medium Onion finely chopped or pureed

2 Tbsp tomato paste

4 clove  garlic minced

2 Tbsp berbere or Red Chili Powder

1/2 cup olive oil or corn oil or vegetable oil

1-2 tsp Tikur Azmud – Black Seed powder

1 Tsp Korarima-Ethiopian cardamom, or false cardamom powder)

sea salt


Add chopped onions to a large skillet and cook over medium heat. Add olive oil and cook until the onion very soft and turn to golden brown. Add Berbere and tomato paste continue to simmer at low heat and stir occasionally. Add water, eggplants and garlic cook eggplants and garlic cook until the eggplants soft. Add some more water if needed let it simmer in the low heat. Add Black Seed powder(Tikur Azmud ), and Ethiopian cardamom, or false cardamom powder (Korarima) and Salt. simmer for a few more minutes. Remove from heat. Serve with Injera.
