Dabo Kolo (Crunchy Bites for Coffee or tea time snack or kids snack) ዳቦ ቆሎ
INGREDIENTS
2 cups all-purpose flour (oats flour)
1/4 cup teff flour
olive oil or corn oil or vegetable oil any oil
2 tbsp berbere or cayenne pepper, turmeric or any natural food coloring to make different color
honey and/or maple syrup and/ or brown sugar (your choice)
1 tsp baking powder
3 tbsp soya powder (optional)
1 tsp salt
water
Preparation
In a mixing bowl, combine and mix dry ingredients.Slowly add the water and olive oil. Mix to form a thick paste. Remove from the bowl and knead it on a lightly-floured surface. Knead it well for 10-15 minutes until you have a stiff dough. Cover the dough let rest in a cool place for few hours.
Break off the dough into handful-size pieces and roll the dough Using the palm of your hand, make a round thin long strips ” bead stick”. Cut these rolls into pieces using scissors so that the ends will be pinched.
Preheat oven to 300°- 350°F. Spray/grease the pan, baking sheet or Standard and heavy duty aluminum foil with cooking spray. Place enough of the uncooked Dabo kolo on a baking sheet/pan. Bake in a hot oven for 15 to 20 minutes, stirring or shaking occasionally to prevent sticking. Bake until lightly browned and crisp on all sides.When done remove from oven and continue the next batch and remove from oven lightly browned and crisp. When you finish baking all allow to cool completely.
