chicken quesadillas with Teff and all-purpose flour tortillas ዶሮ ካሳደያ ጤፍ ቂጣ ）
4large Teff and all-purpose flour tortillas
1 cup grated Monterey Jack cheese or any you like
1 pound chicken breasts
2 tablespoons taco seasoning mix
Salt and pepper
First cut the chicken breast into small bite the sized pieces season it with taco seasoning mix, chili powder, garlic , some salt and pepper. Heat the oil in a large saucepan over medium heat. Add the chicken to the skillet and stirring occasionally until golden about 6 minutes. Add garlic powder, salt and pepper and cook about 1 more minute, then transfer to a large bowl.
Place skillet or nonstick skillet over medium heat. place the tortillas onto the skillet add the cheese on the top of the cheese add the chicken .Top with a little more cheese and top with a second tortilla.When the tortilla is golden on the first side, carefully flip the quesadilla to the other side, adding another 1/2 tablespoon olive oil to the skillet at the same time. Continue cooking until the second side is golden. Repeat with the remaining tortillas and fillings
Cut each quesadilla into triangle.
If you want you can serve with Pico de Gallo
Pico de Gallo
2 ripe plum tomatoes and finely chopped.
1/2 onion, finely chopped.
cilantro leaf, chopped
2 jalapeno, seeded and finely chopped.
1 tablespoon lime juice.
slice the peppers in half. Scrape out the seeds and chop very finely.Combine all ingredients; Slice the lime in half and squeeze the juice from half the lime into the bowl. Sprinkle with salt and pepper, and stir together and serve with chicken quesadillas
