    CABBAGE, POTATO  AND CARROT STEW ( Atakilt Wat)ጥቅል ጎመን ድንች እና ካሮት          አትክልት ወጥ

Ingredients

1 head of cabbage

4  cup sliced carrots

3 medium potatoes

1onion

2 cloves garlic minced

1 tsp minced ginger

1 fresh jalapeno pepper

1/2 tsp salt

1/2  tsp turmeric powder

Olive oil

Preparation

Peel and finely chop the onion. In a large skillet add 1 tbs oil and heat the oil medium-high heat. Add the chopped onions. cook, stirring frequently.While the onion cooks,  Cut the cabbage in half and cut out the core, and then chop the leaves into bite-size pieces. Peel the potatoes and the carrots and chop them into bite-size pieces. Set the vegetables aside.  Add the chopped potatoes, carrots, and turmeric. and keep stirring add some water keep stirring 5 minutes. Reduce heat to medium-low. Add cabbage, minced garlic and ginger, and water. Mix well, cover and simmer until the vegetables are tender, stirring occasionally. cook for 10 minutes with the cover off. Cook until liquid is absorbed. Add the chopped fresh jalapeno pepper and salt. cook few more minutes .serve with Teff injera or Teff Pita. enjoy
