Lentil Salad ( Azifa) አዚፋ
Ingredients
1cup lentils
1/2 finely chopped onions
2-3 jalapeno pepper or green hot pepper finely chopped
1 ts grind ginger
1 – 2 lemon or lime juice of
2 tbs olive oil
salt and pepper
ground mustard
Preparation
Rinse the lentils and put into a medium saucepan add water. Bring to a boil over medium-high heat, until the lentils are soft. Then drain well by strainer and put in a bowl. Smash the lentils a little with a spoon and set aside to cool. Mix Mustard, lemon and olive oil in a separate bowl and stir to combine to make seasoning.Add seasoning, then Put it in the refrigerator to chill Serve with injera, pita bread. Enjoy.
