Ayib( Fresh Ethiopian Cheese with collard green  (Ayib Begomen) አይብ በጎመን
1 Ib. collard green
1 Ib. cottage cheese
1 tsp. black pepper
3 Tbsp. olive oil
1 tbs korerima(ground cardamom)
1 tbs mitmita(hot red pepper)
to taste salt
Wash the collard green with water and chop. Cut the stems out from the leaves. carving out the stem from the collard green leaf (or dry collard green and change into powder ) Heat olive oil in a pan and add chopped collard green then add mitmita,korerima, black pepper and salt .turn of the heat .and mix well with the cheese. Refrigerate to store.serve with injera, Teff sourdough Bread
