lentils fit fit (ye defen misir fit fit) ድ ፍ ን ም ስ ር ፍትፍት
Ingredients
1/2 cup lentils, soaked and rinsed
1 big onions, finely chopped
2 tomato chopped
3-4 cloves garlic and ginger minced
3 tablespoons extra virgin olive oil
2 tsp turmeric
1 hot green pepper or jalapeno pepper
2 tsp Korarima-Ethiopian cardamom, or false cardamom powder
sea salt
Preparation
soak the lentils into a bowl and cover with water about an hour or two.it helps the lentils faster to cook. Add the chopped onion in a skillet over medium-high heat. Stir frequently until the water evaporates about 5 minutes. Once the onions begin translucently, add 1/4 cup oil. cook for 5 more minutes. Add tomato, turmeric, garlic, and ginger to the skillet. Drain the lentils add into the sauce and mix well. Add water then cover the lid. Reduce heat to medium-low to simmer. When the lentils are soft add chopped hot green pepper or jalapeno pepper, 3 tbs of olive oil, Korarima (false cardamom powder)and salt. simmer 5 more minutes then turn off the heat. Cut injera in small pieces. Add into the different bowl and add the sauce. Mix it well thoroughly coat the injera with the sauce and serve.
