How to bake Teff Ambasha የጤፍ አምባሻ

3 cups Teff flour, (Oats flour, All-purpose flour 1 cup each)

1tsp sugar

1 tsp active dry yeast

1tsp baking powder

1tsp salt

Warm water

(coriander, Nigella sativa Black seed (Tikur azmud), Caraway Nech azmud)

(1 tsp each)

1/3 cup oil or butter

Preparation

mix active dry yeast, Sugar into the lukewarm water. Stir in water until it’s well combined and let it stand for about 5 -10 minutes when it starts to bubble. Then add teff flour and (Oats flour, All-purpose flour 1 cup each)   mix it well and cover with plastic wrap and let stand at room temperature overnight for 10 to 12 hours even longer. Next day add  (oat and all-purpose, oil then knead very well by hand. You have to knead until it becomes smooth & elastic. then cover with plastic wrap and after 2 or 3 hours dough will become puffy and dotted with bubbles. Meantime Preheat oven or mittad to 350°F.  Now wrap up a big tray or safed by plastic wrap and spread a little oil not to stick.

make the dough like large pizza working from the middle out by spreading the dough by our hand, then make 8 shallow cuts intersecting through the center to form a wheel pattern. Start to decorate by pressing with fork, spoon, knife whatever design you like when you decorate use oil for your knife, spoon, fork it helps not to stick. When we finish decorating the dough. bake it 350°F by mittad or oven for 15-20 min.

If you use injera mittad:-

When done decorating flip the hand-decorated side down on to the preheated mittad. Cover the led. wait to see some steam out of the vent on top. Open up the led in about 15-20 mins and check Ambasha is done on the bottom by looking around the edges. lifting it up slightly to check if you’ve got the kind of golden brown. when the bottom is done and it’s time to flip using safaid. Carefully flip the Ambasha and cook on the other side then take out and allow to cool

If using an oven: –

just pre-heat the oven and place your decorated dough on to the baking tray before you put it in. just slide down. Bake for 20 minutes or until cooked through and golden brown and turn upside down. when both sides golden brown takes out from the mittad or oven.

Serve as a snack, breakfast or meal.

1 የሻይ ማንኪያ ጨው
ለብ ያለ ውሃ
ዘይት
ጥቁር አዝሙድ፣ ነጭ አዝሙድ፣ድምብላል 1 የሻይ ማንኪያ
ሹካ፣ ቢለዋ፣ ማንኪያ
አሰራሩ
አንድ የሻይ ማንኪያ የዳቦ እርሾ ፣  አንድ የሻይ ማንኪያ ስኳር ፣ ሁለት የቡና ሲኒ ለብ ያለ ውሃ (ያልሞቀ) አንድ ላይ በመቀላቀል ከድነን  ከ5-10 ደቂቃ ኩፍ እስከሚል መጠበቅ ከደቂቃዎች በኋላ ኩፍ ሲል ለማቡኪያ በሚመች ጎድጓዳ ዕቃ ውስጥ መገልበጥ እና ጤፍ በጥብጦ ሸፍኖ ማቆየት ወይም ማሳደር ከዚያ(ፍርኖ ዱቄት ወይም የስንዴ ዱቄት ወይም አጃ 1 ኩባያ) በማቀላቀል ለብ ባለ ውሃ ጠብ ጠብ እየተደረገ በጣም ጊዜ ወስዶ ማሸት። ለመጠፍጠፍና ቅርፅ ለማውጣት እንዲመች ወፈር አድርገን ማቡካት። የተቦካው ሊጥ በደንብ ብድግ ብሎ ኩፍ እስከሚል ንፋስ በማያስገባ ክዳን መከደን።  ሰፌድ ወይም ትሪ ላስቲክ አልብሶ ውጥር አድርጎ መቋጠር ከዛም ላስቲኩን ዘይት መቀባት። ሊጡንቀጠን አድርገን ሰፌድ ወይም ትሪ ላይ መጠፍጠፍ ሲበቃው በቢላ፣ በካንኪያ ወይም በሹካ ጫፍ እላይ ላይ  ቅርፅ መስራት ። ምጣድ 350°F አስምቶ ወይም አግሎ በጨርቅ ማሰስ ቀጥሎ የተዘጋጀውን አንባሻ ሸርተት አድርጎ የጋለው ምጣድ ላይ ማንሸራተት እና መክደን። ስሩ ሲበስል እንደገና የላዩን ወደ ታች መገልበጥ ከዛም ሲበስል አይቶ ማውጣት ቀዝቀዝ ሲል መመገብ። ለቁርስ፣ለመክሰስ ውይም ከምግብ ጋር መመገብ።
