chicken quesadillas by Teff and all purpose flour tortillas (pita)(ዶሮ ካሳደያ በጤፍ ቂጣ )

chicken quesadillas with Teff and all-purpose flour pita bread ዶሮ ካሳደያ ጤፍ ቂጣ


4 large Teff and all-purpose flour pita bread

2 cup Shredded Cheddar and Monterey jack cheese ( You can use any kind you want)

1 lb chicken breasts

2 tbsp taco seasoning mix( chili powder, paprika, berbere, cumin, oregano, garlic powder, salt, and black pepper

1/2 cup thick salsa (tomato, onion, green, yellow, redbelly pepper). (for salsa:- heat oil in the skillet. Add bell peppers and onion and tomato saute until tender and thick sauce) optional

Olive oil

1 Tbsp of Unsalted Butter


First cut the chicken breast into the small bite-sized pieces or cut the chicken into strips. Season chicken with chili powder, paprika, berbere,  cumin, oregano, garlic powder, salt, and black pepper or season with taco seasoning mix and salsa. Heat the oil and butter in a large saucepan over medium heat. Adding butter helps the chicken to be moist.  Add the chicken to the skillet, cook it for about 7 to 8 minutes or until fully cooked through. Remove the chicken and place it onto a plate. Place skillet or nonstick skillet over medium heat. place the pita onto the skillet add the cheese on the top of the pita, add the chicken. Top with a little more cheese and top with a second pita. When the pita is golden on the first side, carefully flip the quesadilla to the other side, adding another 1/2 tablespoon olive oil to the skillet at the same time. Continue cooking until the second side is golden. Repeat with the remaining pita and fillings.

Cut each quesadilla into four triangles pieces.

If you want you can serve with salsa



2 ripe plum tomatoes and finely chopped.

1/2 onion, finely chopped.

1 cup  chopped Cilantro

2  jalapeno, seeded and finely chopped.

1 tablespoon lime juice.

1/2 tsp of Cumin

1 /2 tsp Oregano

1tsp of Sugar

 Salt and pepper


slice the peppers in half. Scrape out the seeds and chop very finely. Combine all ingredients; Slice the lime in half and squeeze the juice from half the lime into the bowl. Sprinkle with salt and pepper, and stir together and serve with chicken quesadillas.
